Guest Recipe: Eric's Vegan BBQ Ribs

Recipe by Eric Swaim.

Serves at least 2.

Ingredients:

  • 16 oz (2 blocks) “Silk Road” (azuki bean + sesame seed) tempeh

  • 1/2 c organic hoisin sauce

  • 1/4 c Bachan’s Japanese BBQ sauce

  • 1/4 c organic sweet chili sauce

  • 2-3 drops liquid smoke (go easy, a little goes a very long way)

  • Option, for serving: toasted sesame seeds, cilantro, or anything bring green.

Preparation

Mix all sauce ingredients together to combine. Measurements are estimated, but you’re going for thick, sticky, and sweet. Slice tempeh into thick, rib-like slices (about 8-10 slices from two 8-oz blocks).

Completely submerge in a shallow dish with your sauce and marinate for at least 30 minutes. (The longer the better obviously.) Reserve extra sauce for serving.

Preheat oven to 425f. Please marinated tempeh strips evenly on a parchment-lined baking sheet. Make for about 30-40 minutes or until the corner edges are crispy, pulling out every 10 minutes to baste with sauce.
